The Hôtel Hermitage Monte-Carlo Presents its Yule Log

The Groupe Monte-Carlo SBM and Head Pastry Chef Nicolas Baygourry, in association with Michelin-starred chef Joël Garault, have designed a very special Yule Log for the Group's 150th anniversary.



The 150th Anniversary Yule Log pays tribute to both tradition and modernity.  The chocolate cake is in a streamlined original design, with a velvety golden coating, and features Monte-Carlo SBM's 150th anniversary colours.

This unusual creation highlights the local, authentic flavours of the season, which are perfectly combined with a variety of interesting textures, evoking the atmosphere of a real Riviera-style Christmas.

The base of the cake is made of a biscuit with toasted Piedmont hazelnuts, on which is placed a thin layer of crispy praline with the zest of Menton lemons, adding a refreshing, delicate flavour.

In the centre is a cream of Menton lemons and a light Tahiti vanilla mousse with the fragrance of Menton mandarins.

Finally, the Yule Log is wrapped in a sparkling, velvety macaroon-style coating with gold leaf, sprinkled with the magic of the 150th anniversary of the Monte-Carlo SBM.
