With thirty or so shops worldwide, chocolate maker Pierre Marcolini has now opened a shop on the Boulevard des Moulins in Monaco
When it comes to chocolate, Pierre Marcolini – an internationally renowned chocolatier and world champion pastry chef – is totally committed.
He travels all around the world in search of the highest quality chocolate (the most sought-after "crus") and the best cocoa beans, meeting the farmers in person and always offering them a price that is higher than the market price, to "make the market more secure."
He is one of the few chocolatiers who roast their own cocoa beans. With an emphasis on quality and excellence, he and his artisan chocolate makers are present at all stages of the transformation from cocoa bean to "haute couture" chocolates.
Individual chocolates, squares (Pierre Marcolini's bars aren't rectangular) and macaroons – his creations are avant garde, exquisite and refined.
