From his island origins - Marcel Ravin was born and raised in Martinique - the three-star chef has retained a deep respect for fishing and maritime culture. He has chosen to celebrate these through the menu of the Elsa restaurant, offering a veritable marine garden, where the delights of the sea harmonise with the treasures of the land. Daring combinations, such as tuna rossini or iodised celery with plankton, reveal a delicious symphony of tastes, celebrating the richness of our marine environment. With seawater steamed here and marine and vegetable juices there, each flavour of the sea and of fishing enhances the products of the land in a gastronomic experience that is as ethical as it is tasty.

True to its values, the restaurant is resolutely committed to sustainability and the preservation of marine resources, favouring fresh products from sustainable fishing, certified by the World Ocean Network of the Mr. Goodfish label. As for the plants, they come from the sun-drenched Domaine d'Agerbol in the hills above Roquebrune Cap-Martin.
