From his island origins - Marcel Ravin was born and raised in Martinique - the three-star chef retains a deep respect for fishing and maritime culture. He has chosen to celebrate them in the Elsa menu, offering a veritable marine garden, where the delights of the sea harmonize with the treasures of the land. Daring combinations, such as tuna rossini or iodized celery with plankton, reveal a delicious symphony of tastes, celebrating the richness of our marine environment. From seawater steaming to marine and vegetable juices, each flavor of the sea and fish sublimates the products of the land in a gastronomic experience as ethical as it is delicious.

As for the plants, they come from the sun-drenched Domaine d'Agerbol in the hills above Roquebrune Cap-Martin.
