Named Mada One, short for Madame and in homage to the ancient name given to Martinique, Madininia (or Madiana), meaning "mythical island", this "ready-to-eat" restaurant concept, part café, part bistro, part patisserie, offers an elegant and diversified range of snacks.

Signature culinary creations to discover... The Chef will also surprise customers with Monegu ("Monaco" in Monegasque and "the taste of people" in Creole), a "travel cake", a subtle blend of brioche and panettone, in the colors of Monaco: white and red. A reinterpretation of Mediterranean flavors (Menton lemon, jam, etc.) as a tribute to his adopted homeland and a sign of his attachment to the Principality. A Monegasque frite is also on the drawing board!
