Yannick Alléno takes the reins of the Vistamar

After weeks of work and productive discussions, Monte-Carlo Société des Bains de Mer is proud and delighted to entrust world-renowned chef Yannick Alléno with the kitchens of the Vistamar, now to be known as "Yannick Alléno at the Hôtel Hermitage"

Popular with connoisseurs, created by Joël Garault, and managed until 2019 by Benoît Witz, before being taken over by the talented Jean-Philippe Borro, who continues to ensure its star shines brightly, the hotel's gastronomic restaurant is now preparing for a spectacular transformation, as it becomes the new home of Yannick Alléno in his first adventure on the Côte d’Azur.  

Yannick Alléno, the multi Michelin-starred chef, owes his international reputation to his particular vision of cuisine, inspired by traditional French cooking but infused with a resolutely modern, international touch that ensures each of his restaurants is an experience not to be missed.

His credo? "Simple cuisine. The idea isn't to go beyond the stars, but to savour the pleasure of receiving."

The arrival of the multiple Michelin-starred chef in April 2021 is an event that is sure to delight lovers of fine cuisine, offering the region's gastronomes the opportunity to taste this exceptional dining experience. The first stage of Yannick Alléno's reign begins this year, with the introduction of a new menu and the refurbishment of the restaurant's famous terrace, with its sumptuous views of the Mediterranean Sea and the Rock of Monaco. Phase two will arrive in 2022, with a new interior design crowned by the Chef's iconic Pavyllon emblem, all created by Chahan Minassian, Yannick Alléno's trusted collaborator. 

This strategic and gastronomic repositioning is the latest in a series of exciting projects begun by MonteCarlo Société des Bains de Mer five years ago, and reflects the Group's commitment to looking forward, continuing to astonish and focus its energy on new culinary offerings.
