"From Bean to Bar" Lecture in Monaco
On Monday 30 March, the Variety Theatre will be host to chocolatier Pierre Marcolini, who will give a talk entitled "From Bean to Bar"
Pierre Marcolini is an avant-garde chocolatier who likes to create surprises and introduce new flavours. Whether he is revisiting the classics or giving free reign to his imagination, his creations are proof of his tireless quest for perfection.
He oversees every step of the chocolate-making process and is one of the last remaining chocolatiers to roast his own beans, which gives him exceptional control over the depth of flavour of his chocolate.
Pierre Marcolini was born in Belgium, and was attracted to patisserie at an early stage "by the sin of gluttony." He was crowned world patisserie champion in 1995 and opened his own workshop that same year. He went on to open several shops in Belgium and Japan, as well as in London, New York, Kuwait City, Paris and Monaco.
